  • 2 cups corn kernels
  • ½ cup grated carrots
  • ½ cup finely chopped onions
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar
  • 20 pieces rice paper wrappers
  • as needed Oil for frying

Instructions
 

  • Mix corn, carrots, onions, green onions, cilantro, salt, pepper, and sugar in a bowl.
  • Soak rice paper wrappers in warm water until soft.
  • Place a spoonful of filling on each wrapper and roll tightly.
  • Heat oil in a pan and fry rolls until golden and crispy.
  • Drain on paper towels and serve hot.

Serve with your favorite dipping sauce.
